Old Earth Fig Jam

Such excitement yesterday! We went through a black hole; Seven tried to assimilate Kes; and I invented a new recipe for the crew's breakfast. Some reverse engineering was involved, but since that jar of Fractured Amy's fig jam first materialized in stellar cartography I have been able to do some digging in Starfleet's computer archives to find a likely procedure for its reproduction in my galley. I even found some ancient Earth photographs of what the jam is supposed to look like!

I served the jam with banana pancakes, gagh, and raktajino. Everybody loved it, except for Seven, who had to return to her alcove for regeneration.

Here's my recipe!

Neelix's Fig Jam

First you need to replicate the following ingredients:
  • 18 oz of dried figs
  • three and one-quarter cups of water
  • one-third cup of orange juice
  • one tablespoon of fresh lemon juice
  • one box (17.5 oz) of commercial fruit pectin
  • three and one-half cups of sugar
Cut the stems off the figs and also the little hard bits at the other end. Cut them into halves. Put them in a pan with the water and simmer for twenty minutes, or until they are soft.

Puree them, either in your food processer, your food mill, or your warp core.

Put the puree back in the pan with the orange and lemon juices. Whisk in the fruit pectin.

Bring the mixture to a boil.

Add the sugar all at once.

Bring to a rolling boil and boil for one minute.

Ladle the jam into jars and process for 10 minutes if you want a vacuum.




And let's face it - in space, a vacuum is never that far away!
